Notes

Your post-boil volume should be 3 gallons so make sure the starter is big enough to handle the approximately 1066 OG. Once primary fermentation is complete, rack to a secondary along with 2 gallons of pasteurized apple juice - the more natural the juice the better. Wait for fermentation to finish completely and add gelatin finings.
